I've read through the book a couple of times and have not found a clear description about how to determine economic value or develop graphs with the problem solver data. Can someone point me in the right direction or can we cover these items in tomorrow's class.

I have not explored the intricate details of the Solver add-in, but you should be able to use Excel's built-in chart function to create graphs from your spreadsheet data. I can't imagine why they would re-invent the wheel and create their own chart function when Excel already supports that feature.
